Cod Fish Soup
3 big garlics, chopped small
1/2 jalapeño, no seeds & chopped small
1 large onion
1 green pepper
1/2 teaspoon red crushed pepper
3 tablespoons olive oil
3 teaspoons salt
1/3 teaspoon black pepper
1/2 teaspoon turmeric
1/2 bunch of cilantro, chopped small
4 bay leaves
2 packages of Cod fish (leave frozen)
1 small cabbage, cut into 4 large pieces (remove the heart/core)
2 large potatoes, cut in cubes
4 carrots, sliced
4-6 mushrooms, sliced
14 cups of water
Chop the garlics, jalapeño, cilantro, and a small portion of the onion and green
pepper. Sauté in the oil to make "sofrito". Add the red crushed
pepper. Cook for 2-3 minutes.
Cut the remainder of the onion and green pepper in to medium
slices. Leave the fish whole. Add the remainder of the ingredients and
simmer for 2 hours.
Yield: 8 to 10 servings
